I hosted a Dehydration Class this past weekend at my home for a dozen intrepid women who wanted to learn the in’s and out’s of dehydrating everything from breakfast scones to garic loaves and Raw Fusion Chocolate Chip Cookies.
Having a dehydrator can really amp up your Raw Fusion lifestyle. I recommend the Excalibur style, where you have large square trays, screens and the teflex or paraflex sheets that make it easy to create wraps, fruit roll ups and a variety of sweet and savory crackers that help you substitute your cravings in a satisfying, yet nutritious manner.
These wraps are rather simple and ultra-versatile. You can create a healthy lunch (pictured) with lettuce, tomatoes, sprouts and avocados, sprinkled with a little cold-pressed olive oil and vinegar. For dinner, fill them with homemade nut pates or you can even fill with cooked food, raw fusion style. They are ideal for family members who are cutting back on grains and gluten.
We also made a version of these with ground chia seeds for one of our guests who is sensitive to flaxseeds. I recommend grinding either the flax or chia seeds fresh rather than buying them pre-ground. Once they are ground, the oils can become rancid if stored.

Curry Coconut Wraps
(makes 6 wraps)
1 cup flax seeds
1/2 cup dried unsweetened coconut (finely shredded)
1 tsp. curry paste or powder
1/2 tsp. ground tumeric
1/2 tsp. sea salt
1/2 tsp. cayenne pepper
1 tsp. honey or agave or coconut nectar
1 TB. lemon juice
Directions: Grind the flax seeds in dedicated coffee grinder or high-powered blender, making sure unit and seeds are dry. This will turn the flax seeds into flour.
In a food processor, combine all the ingredients & process to form a smooth batter with the consistency of thick cream. Check the sweetness – you can add 1/2 an apple instead of using the honey/agave. Spread the batter in4- 8 inch round circles (or single sheet) on Teflex sheets. Shape with a spoon or spatula.
Dehydrate for 2-4 hours (depending on thickness of wraps) at 115º F. Flip after 1-2 hours. Wraps are ready when they are pliable & easy to handle.

Spread raw almond butter, sprinkle on some raisins or other dried fruit and add either chopped cucumber or green apple. Fold gently and enjoy with nut milk or herb tea.
